  1. Part 1: - sublime pizza dough

  2. 1 kg ‘tipo

  3. 00' flour - sifted (plain flour will do in a pinch)

  4. 625 ml purified luke warm water (32 degrees c)

  5. 25 ml australian white wine (room temperature)

  6. 15 g instant active dried yeast (c. 2 teaspoons)

  7. 30 g (c. 1 tablespoon) - quality australian honey

  8. 30 ml extra virgin olive oil (australian is best)

  9. 25 g finely ground sea salt

  10. Part 2: - filippo's sicilian pizza sauce

  11. 2 x 800 g can whole peeled tomatoes

  12. (san marzano imported from italy is best)

  13. 1 head garlic (australian)

  14. 1 brown onion

  15. 2 dried birds eye chilies (pepperoncino)

  16. Cracked pepper

  17. Sea salt (or australian murray river salt)

  18. 1 bunch fresh italian basil

  19. 1 sprig fresh thyme

  20. 100 ml - red/white wine (room temperature)

  21. Cognac or dry sherry (french cognac is best)

  22. splash red wine vinegar (italian is best)

  23. 1 tablespoon raw brown sugar (australian)

  24. Part 3: - items to finish your pizza

  25. buffalo mozzarella/fior di latte (or soft mozzarella cheese)

  26. Colby and/or cheddar cheese

  27. Italian parma ham (or spanish chorizo)

  28. garden fresh basil leaves

  29. extra virgin olive oil (australian is best)

  30. dried greek or sicilian oregano

  31. Items and tools required:

  32. clean hands

  33. clean surface or cutting board for kneading

  34. 2 x wooden spoons

  35. 1 x large bowl 1 x medium bowl kitchen scales

  36. measuring cup

  37. cling wrap

  38. Clean tea towel

  39. 1 x teaspoon 1 x tablespoon

  1. Dissolve the yeast and honey in the water.

  2. Mix all ingredients to make a soft dough.

  3. Knead well until smooth and very elastic.

  4. Shape into balls and leave to rise in a warm place until doubled in size.

  5. Make 250 gram dough balls and put into separate take away containers and let rise for a further hour.

  6. Roll the dough out into a thin round shape on your floured pizza peel.

  7. Put on toppings and bake in the wood fired oven pn the floor of the oven. Turn every 15 - 20 seconds until cooked.
