  1. 1 cup(s) canola oil

  2. 6 Yellow Plantain , ends trimmed, peeled ad cut into 1/2-inch diagonal slices

  3. 1 teaspoon(s) kosher salt

  4. Freshly ground pepper to taste

  1. Attach a deep-fat thermometer to side of a large skillet. Add oil and heat over medium heat to 350°F.

  2. Fry plantain slices, in two batches, until golden brown, 2 minutes per side, turning once. Drain slices to paper towels. Season with salt and pepper and serve hot.

  3. Personal favorite step:

  4. After you bring out of skillet, and before you drain take a coffee cup and smash the plantain to flatten.
