  1. 1 lb. boneless, skinless chicken breasts, cut into 1" pieces

  2. 3 (14 oz.) cans ready to serve chicken broth

  3. 1 (14 oz. ) can ready to serve vegetable broth

  4. 1 onion, chopped

  5. 3 cloves garlic, minced

  6. 3 carrots, sliced

  7. 2 stalks celery, chopped

  8. 8 oz. pkg. sliced fresh mushrooms

  9. 1/2 cup long grain rice

  10. 1/2 tsp. dried basil leaves

  11. 1/4 tsp. dried thyme leaves

  12. 1/2 tsp. salt

  13. 1/8 tsp. white pepper

  1. Combine all ingredients in 4-5 quart crockpot. Cover and cook on low heat for 6-8 hours until chicken is thoroughly cooked and vegetables and rice are tender. Serves 8
