  1. 1 c Whole-Wheat Four

  2. 1 c Unbleached All-Purpose Flour

  3. 1 ts Baking Soda

  4. 2 ts Baking Powder

  5. 1/2ts Salt

  6. 1/4ts Ground Nutmeg

  7. 1/2ts Ground Cinnamon

  8. 2 lg Eggs, Slightly Beaten

  9. 1/3c Honey

  10. 1 c Lowfat Lemon Yogurt

  11. 2 tb Canola Oil

  12. 1/2c Shredded Carrots

  13. 1/2c Chopped Raisins

  1. + Directions : Preheat the oven to 325 degrees F. (165 degrees C. ). Grease a 9 X 5-inch loaf pan and set it aside. In a large bowl, stir together the whole wheat flour, the unbleached flour, soda, baking powder, salt, nutmeg, and cinnamon. In a medium bowl combine the eggs, honey, yogurt and oil. Add to the dry mixture and stir until well blended. Stir in the carrots and raisins. Bake in the preheated oven for 45 to 50 minutes or until a wooden pick inserted in the center comes out clean.
