  1. 1 1/2 lbs 681g / 24oz Tomatoes - peeled, seeded,

  2. And chopped 1 Green bell pepper - chopped

  3. 1 Cucumber - peeled, seeded,

  4. And chopped 4 Radishes - chopped fine

  5. 3 Scallions - sliced thin

  6. 2 tablespoons 30ml Minced fresh parsley

  7. 2 tablespoons 30ml Minced fresh mint

  8. 3 tablespoons 45ml Fresh lemon juice

  9. 1 Garlic clove - mashed to a paste

  10. Salt - to taste

  11. Freshly-ground black pepper - to taste

  12. 3 tablespoons 45ml Olive oil

  1. In glass bowl combine the tomatoes, green pepper, cucumber, radishes, scallions, parsley, and mint. In a small bowl, whisk together the lemon juice, garlic, and salt and pepper to taste, add the oil in a slow stream, whisking, until the dressing is emulsified. Drizzle the dressing over the vegetables and toss the salad until combined well.

  2. This recipe yields 3 1/2 cups.
