  2. Apple Fritters

  7. 6 large large apples

  8. 1/2 cup all-purpose flour

  9. 1/2 teaspoon cinnamon

  10. 1/8 teaspoon nutmeg

  11. 2 tablespoons sugar

  12. fresh lemon juice

  13. 1 egg -- separated

  14. 1/2 cup milk

  15. powdered sugar -- sifted

  16. Peel and core apples. Slice crosswise into 1/2 rings, dropping slices

  17. into water acidulated with lemon juice as they are sliced.

  18. Sift flour with cinnamon, nutmeg, and sugar. Beat egg yolk with milk. Add

  19. egg mixture to dry ingredients and beat until smooth. Beat egg white until

  20. stiff peaks form. Fold egg white into batter.

  21. Drain apple rings and pat dry on tea towel. Heat oil or shortening to 375

  22. degrees. Dip apple rings in batter, coating both sides. Drop rings onto hot

  23. oil, five or six at a time (one layer, not overcrowded). Fry until golden

  24. brown, turning once, about five minutes. Remove to paper towels to drain.
