  1. 1 pound cooked crab meat

  2. 4 tablespoons (1/2 stick) butter

  3. 2 tablespoons finely chopped onion

  4. 2 tablespoons finely chopped celery

  5. 3 tablespoons all-purpose flour

  6. 1 teaspoon salt

  7. 1/4 teaspoon paprika

  8. 1/8 teaspoon ground white pepper

  9. 4 cups milk

  10. 1/4 cup chopped parsley

  1. Remove any remaining shell or cartilage from crab meat. In a medium saucepan, melt butter over low heat, cook onion and celery until tender, but not browned, about 5 minutes.

  2. Whisk in flour, salt, paprika and white pepper. Add milk gradually, stirring constantly; simmer until thickened, about 5 minutes. Add crab meat and heat through. Just before serving, sprinkle with parsley.
