  1. For the Crêpes :

  2. 125 g flour

  3. 40 g powder sugar

  4. 1 egg

  5. 3,5 dl milk

  6. 125 ml cream

  7. 50 butter

  8. lemon zest

  9. For the raspberry sauce:

  10. 200 g raspberry

  11. 1,5 dl pommegranate juice

  12. For the filling:

  13. 1 pear

  14. 0,5 white wine

  15. 1 tablespoon sugar

  16. 2 egg yolk

  17. 120 g sugar

  18. 18 g vanilla

  19. 1 vanilla pod

  20. 400 ml milk

  21. 150 ml cream

  1. Prepare Crêpes: Sift flour and powder sugar. Add egg yolk, milk, cream and lukewarm, melted butter, and lemon zest. Let it stay for about 5 minutes. Bake Crêpes in a buttered sauce pan.

  2. Cut pear in cubes, add some orange juice, vanilla and white wine and cook for some minutes.

  3. Puree raspberry with pomme granate juce, sugar if needed.

  4. Prepare vanilla ice:

  5. Beat egg yolk, sugar, vanilla until frothy. Warm milk with vanilla pod and add to egg yolk mixture. Let it cool. Add whipped cream and pour into the ice maker.
