  1. 2 cups white rice

  2. 1/3 cup lemon juice salt -- to taste

  3. 6 tablespoons cooking oil

  4. 1/2 teaspoon black mustard seeds

  5. 3 stems curry leaves

  6. 1/2 cup peanuts

  7. 4 medium green chiles

  8. 1/2 teaspoon turmeric

  9. 4 cups water

  1. Preparation : In a large bowl, add water and rice and cook until well done. Keep it aside. Meanwhile in a large skillet, heat cooking oil on low heat. To this add black mustard, peanuts, turmeric and fry until peanuts start to split. Then add chopped green chiles, curry leaves and salt. After three minutes remove from heat and add the lemon juice and stir. To this add cooked rice and mix thoroughly. Note: You can adjust the amount of lemon juice according to your taste.
