  2. 1 c Butter or margarine; soften

  3. 2 2/3 c Cake flour

  4. 2 ts Baking powder

  5. 2 ts Lemon extract

  6. 1/2 ts Salt

  7. 3 lg Eggs

  8. 8 oz Crushed pineapple in juice

  9. 2 minutes, occasionally scraping bowl. Spoon batter into pan. Bake

  10. 50-55 minutes or until tested done. Cool cake in pan on wire rack for 10 minutes; remove from pan to cool completely. --
