  8. 1 2/3 c chocolate wafers -- Crushed

  9. 1/3 cup butter -- melted

  10. FILLING:

  11. 2 Envelopes unflavored gelatin

  12. 1/4 ts Salt

  13. 1 tb Instant coffee granules

  14. 2 c Milk

  15. 4 Eggs, separated

  16. 1/3 c Irish Cream liqueur

  17. 1 lb Cream cheese

  18. 1/2 c Granulated sugar

  19. 4 oz Semisweet chocolate

  20. This can be made a day ahead, and it freezes well too.

  21. CRUST; In bowl, combine wafers and butter. Press into 13 x 9 inch

  22. glass baking dish. Refrigerate.

  23. FILLING; In saucepan, cook gelatin, salt, coffee and milk, stirring

  24. constantly, over medium heat until hot and coffee is dissolved.

  25. Reduce heat. Stir a little coffee mixture into egg yolks, then pour

  26. egg mixture back into saucepan. Cook, stirring frequently, until

  27. mixture thickens slightly, 4 - 5 minutes. Remove from heat and add

  28. liqueur. Using electric mixer or food processor, blend cream cheese

  29. and 1/4 cup of the sugar until smooth. Slowly blend coffee mixture

  30. into cream cheese. Chill, stirring occasionally, until consistency of

  31. raw egg whites, about 1 - 1-1/2 hours. Meanwhile, melt chocolate in

  32. double boiler over hot water. Let cool. Beat egg whites until soft

  33. peaks form. Gradually add remaining sugar and beat until stiff peaks

  34. form. Gently fold egg whites into coffee mixture. Transfer 1-1/2 cups

  35. of coffee mixture to small bowl and fold in chocolate. Using large

  36. spoon, alternately spoon two mixtures over chocolate crust. Use knife

  37. to swirl chocolate through - - - - - - - - - - - - - - - - - -
