  1. Ingredients :Serves 4

  2. 4 tablespoons 2 cloves

  3. 1 500 g 225 g 4 2 tablespoons 2 tablespoons Garnishing :

  4. 3 tablespoons 4 sprigs

  5. Groundnut oil

  6. Garlic, finely chopped

  7. Small red chili, finely sliced

  8. Lean rump steak

  9. Bamboo shoots, drained and sliced

  10. Spring onions (scallions), finely sliced

  11. Vietnamese fish sauce

  12. Water

  13. Sesame seeds, toasted

  14. Basil leaves

  1. Heat half of the oil in a wok and fry thegarlic and chili for about 30 seconds.

  2. Add the steak and cook for 1 minute, thenremove the meat and set aside.

  3. Heat the remaining oil in the wok, add thebamboo shoots and spring onions.

  4. Stir-fry for 1-2 minutes. Add the fishsauce and water. Bring the sauce to the boil.

  5. Add the steak and any juices it has made, Stir well to warm the steak through.

  6. Transfer it to a warmed serving dish andsprinkle with sesame seeds and basil leaves.
