  1. 1 kg aloo

  2. 4 onions

  3. Garam masala /dabeli masala

  4. 1 cup peanuts

  5. 2 tsp salt

  6. 2 tsp red chilly powder

  7. 4 tbsp tamrind paste and jaggery chutney

  8. 2 tbsp garlic chutney

  9. For dabeli masala

  10. 1 tsp whole cloves (about 4-5)

  11. tsp fennel seeds

  12. tsp black peppers

  13. tsp coriander seeds

  14. 4 dried red chilies (thai or cayenne), stems removed

  15. 4 blades of mace or 1/4 tsp ground mace

  16. 2-3 whole star anise

  17. 1-2 dried bay leaves

  18. Seeds from 1-2 black cardamom pods

  19. tsp ground ginger

  20. Pinch of turmeric powder

  1. Method for Dabeli masala powder:

  2. There is no roasting of spices involved in making this aromatic Dabeli Masala. All you have to do is place all the ingredients in a spice blender or coffee grinder and grind to fine powder.

  3. Store it in an air tight container till needed. It will last for 2 months when stored in fridge.

  4. Method for making Dabeli :

  5. Boil the aloos and after pealing mash them well and keep aside.

  6. In a pan heat ½ cup oil for frying the peanuts, deep fry and add salt, 1 tsp sugar and ½ tsp red chilly powder .

  7. In the remaining oil add lason chutney, allow to sizzle.

  8. Add garam masala, red chilli powder, emlee chutney.

  9. Also add the mashed aloos.

  10. Fill it in bun with fried peanuts & chopped onions. Serve hot
