  1. 3 cooked chicken breast fillets, diced

  2. 5 tablespoons dried cherries

  3. 5 tablespoons diced celery

  4. 5 tablespoons toasted, chopped pecans

  5. 5 tablespoons low-fat mayonnaise

  6. 1 tablespoon buttermilk

  7. 1/2 teaspoon salt

  8. 1/2 teaspoon ground black pepper

  9. 5 tablespoons cubed apples

  1. In a large bowl, combine the chicken, dried cherries, celery, nuts, mayonnaise, milk, salt and pepper, and apple if desired. Toss together well and refrigerate until chilled. Serve on toasted wholemeal bread.
