  7. 1 tsp baking powder

  8. 1 tsp baking soda

  9. 1 tbsp cinnamon

  10. 1 cup chopped nut s

  11. 1/4 cup coconut

  1. Preheat oven to 325. Grease two 9x5 inch loaf pans. Beat eggs until light and foamy. Add oil, sugar, zucchini, and vanilla; mix well.

  2. Sift together the flour, salt, baking powder, baking soda, and cinnamon. Add to zucchini mixture and mix well. Fold in nuts and coconut.

  3. Pour batter into pans. Bake for 1 hour, or until a toothpick inserted in center comes out clean. Invert on wire rack to cool.
