  2. NEW DUCHESS SPICE CAKE W/ MAPLE BUTTERCREAM F

  6. 2 1/2 c Sifted cake flour OR 2 1/3 c Sifted all-purpose flour

  7. 1 c Sugar

  8. 1 t Baking soda

  9. 1 1/2 ts Cinnamon

  10. 3/4 ts Nutmeg

  11. 3/4 ts Cloves

  12. 1 t Salt

  13. 1 c Brown sugar

  14. 2/3 c Shortening

  15. 1 c Buttermilk

  16. 3 Eggs

  17. 2-9 layer cake pans or one

  18. 13x9 oblong pan. Sift flour, sugar, baking soda, cinnamon,

  19. nutmeg, cloves and salt together. Add the brown

  20. sugar, shortening and buttermilk. Beat 2 minutes.

  21. Add eggs. Preheat oven to 350 degrees. Bake layer

  22. 30 to 35 minutes, oblong pan

  23. 45 minutes until

  24. cake tests done. Cool. Frost.

  25. MAPLE BUTTERCREAM FROSTING:

  26. 1/2 cup Crisco shortening (regular only)

  27. 1/2 cup

  28. 1 tsp. maple flavoring

  29. 4 cups (1 lb.) powdered sugar

  30. Tbsp. milk

  31. Cream butter and shortening. Add maple flavoring.

  32. Gradually add powdered sugar. Gradually add milk and continue beating until light and airy. Add more milk

  33. if needed. Color with paste colors.

  34. This icing is a light yellow and colors you add will

  35. be affected by this. For pure white icing, use 1 cup

  36. regular Crisco shortening and 1/2 tsp. Wilton butter

  37. flavoring. This icing is somewhat stiffer. For blazing white, add Wilton White White. Wilton White

  38. White will also make the first buttercream recipe

  39. whiter, but be careful with colors as they will still

  40. tend to be yellowish.

  41. Note: Excellent cake and frosting!
