  1. 1 lb Fresh medium mushrooms,

  2. -stems removed

  3. 1 c Olive oil

  4. -orange

  5. Grated zest of 1 medium

  6. -lemon

  7. 1/2 c Fresh orange juice

  8. 1/2 c Fresh lemon juice

  9. 2 lg Garlic cloves, very finely

  10. -chopped

  11. 2 ts Salt

  12. 2 ts Mustard seed

  13. 2 ts Finely chopped cilantro

  14. -leaves

  15. 1/2 ts Cayenne

  16. 1/2 ts Freshly ground black pepper

  1. Place mushrooms, oil, zests and juices in a non reactive saucepan over high heat.

  2. Bring just to a boil and remove from heat.

  3. Transfer mixture to a glass jar or bowl, and stir in garlic, salt, mustard seed, oregano,cilantro, cayenne, and pepper.

  4. Allow to cool completely, then cover and refrigerate, stirring occasionally, for at least 24 hours before serving.

  5. Drain mushrooms and serve.

  6. Serves 4.
