  2. MEXICAN WEDDING COOKIES II

  6. 1 1/2 c Confectioner's sugar, divide

  7. 1 c Butter, softened

  8. 3/4 c Finely chopped pecans

  9. 1/2 t Vanilla extract

  10. 2 c All-purpose flour

  11. 1/4 t Ground cinnamon

  12. Preheat oven to 350 degrees F. Grease cookie sheets. In large bowl with

  13. mixer at medium speed, beat together 1 cup of the sugar, butter, pecans

  14. and vanilla. With spoon stir in flour.

  15. Shape dough into 1-inch balls, flatten slightly. Place on cookie sheets

  16. 1 inch apart. Bake

  17. 12 to 15 minutes or until done but not browned.

  18. Cool 5 minutes on cookie sheets.

  19. In small bowl, mix remaining 1/2 cup sugar and cinnamon. Gently toss each cookie in cinnamon mixture; cool on wire rack. - - - - - - - - - - - - - - - - - -
