  1. 6 medium russet potatoes, peeled, quartered

  2. 3 green onions, white parts only, minced

  3. 1 cup mayonnaise

  4. 2 tablespoons cider vinegar

  5. 1 tablespoon mustard

  6. 1 1/2 teaspoons salt

  7. 1/4 teaspoon cayenne

  8. 1/2 teaspoon sugar

  9. 3 eggs, hard-boiled, chopped

  10. 1 cup celery, diced

  1. Boil potatoes in salted water until just tender, drain well, and let cool to room temperature. Cut into 1-inch pieces and add to a large bowl.

  2. In a smaller bowl mix all the other ingredients, except the eggs and celery. Add to the potatoes, add the eggs and celery, and combine with a spatula until everything is mixed. Chill in the refrigerator for at least one hour before serving.
