  1. 1 T Olive Oil

  2. 1 pound dried black bean s

  3. 1 1/2 pounds red onion medium dice

  4. 1 yellow onion peeled and chopped

  5. 4 garlic cloves peeled and minced

  6. 1 pound green bell pepper s medium dice

  7. 1 pound red bell pepper medium dice

  8. 1 T ground cumin

  9. 1/4 tsp cayenne

  10. 2 t paprika

  11. 1 t dried oregano

  12. 1 dried pasilla chili (ancho Chipotle or Habanero chilies)

  13. 1 bay leaf

  14. 4 large tomato es, cored and chopped

  15. 2 large cans

  16. 1 -6 oz can tomato paste

  17. Salt and pepper to taste

  18. Minced jalapeño chilies (use canned that are minced and about 1/3 of a can)

  19. 1 pound Grilled sirloin steak cut into 1/2 inch cubes

  20. 1 pound ground beef

  21. 1/2 pound pork loin

  22. 1 -16 oz can of Guinness (save a little for tasting) (if not get an extra can)

  23. 1 cup of strong-strong coffee

  24. Sour cream for garnish

  25. Chives for garnish

  1. Pour beans in a colander and rinse under running water sorting and remove small stones. Soak and cover beans in water overnight (note one can use canned kidney beans which is less work and time)

  2. Heat a dry skillet over medium heat and toast cumin, cayenne paprika oregano until the start to become fragrant. Be careful not burn them (the other way is just to add them to the pot when you are cooking the meats)

  3. Grind the pasilla chili and bay leaf to a fine power in clean coffee of spice grinder and set aside. (Note the bay leaf can be added to the chili pot and removed before eating)

  4. Heat oil and sauté the onion, garlic and green/red pepper about 5 min. Add to toasted spices, ground spices, tomatoes, and salt and pepper and sauté for 15 min stirring occasionally Add the vegetable mixture to the beans, along with water to cover by 4 inches. Cook on top of the stove covered, for ½ to 1 hour or until the beans are tender Adjust the seasoning and add the chopped cilantro and the jalapeños along with the cubes of sirloin (that has been browned and salted and peppered) simmer for 10 minutes.

  5. Taste several times with the jalapeños the heat will increase with cooking, Also Chipotle sauce with add heat with a definite Southwest flavor.

  6. Serve and garnish
