  2. 1/4 cup 59ml Olive oil

  3. 1/2 cup 31g / 1.1oz Chopped onions

  4. 4 Garlic - finely chopped

  5. 1/2 cup 73g / 2.6oz Green pepper - chopped

  6. 2 cups 125g / 4.4oz Tomato wedges

  7. 1/2 cup 118ml White wine Parsley sprigs - for garnish

  1. Recipe Instructions Remove beard and discard. Rinse mussels in cold water, discard broken or opened mussels. Saute onion, garlic, and green pepper in olive oil in a wok over medium heat for 30 seconds. Add mussels, tomatoes, and wine. Cover and cook for about 4 minutes (until mussels open). Shake pot occasionally while cooking. Garnish with parsley.
