  1. 500g fresh prawns

  2. 1 tbsp lime or lemon juice

  3. 1 tsp five-spice powder

  4. Salt and pepper

  5. 2 eggs

  6. 1/4 cup cornflour

  7. Oil for deep-frying

  8. Sauce:

  9. 1 onion, finely chopped

  10. 1 clove garlic, chopped

  11. 1 tbsp vegetable oil

  12. 3 tbsp tomato sauce

  13. 1 tbsp chili sauce

  14. 1/2 cup stock

  15. 1 tbsp corn flour

  16. 1 red chili, finely sliced

  17. 1 tbsp chopped shallots

  1. Clean, remove veins and shell prawns. If too large, cut each into two pieces and place in bowl.

  2. Mix in the lime juice, five-spice powder, salt and pepper, and allow to marinate for 5 minutes.

  3. Beat eggs together lightly and dip in the prawns until coated, then roll in cornflour. Deep-fry in hot oil until golden brown. Drain on absorbent paper. Place on platter and serve with sauce.
