  1. 7 ounces pasta (cut fideo)

  2. 2 tablespoons vegetable oil

  3. 1 (14 1/2 ounce) can stewed tomatoes , with liquid

  4. 1 3/4 cups water

  5. 1/4 teaspoon salt

  6. 1/3 cup grated parmesan cheese

  1. In a non-stick skillet, heat the oil over medium to medium-high heat. Add the fideo and fry until golden brown. Remove from pan and set aside.

  2. If you don't like chunky tomatoes - pulse in food processor until they are of desired consistency.

  3. In same pan bring tomatoes, water and salt to a boil.

  4. Return pasta to pan with boiling tomatoes. Simmer, partially covered, for about 10 minutes. Stir occasionally to keep noodles from sticking. It's done when liquid is absorbed and pasta is tender.

  5. Remove from heat and stir in grated parmesan.

  6. Cover and let stand 5 minutes before serving. ?
