  2. LEEK OR COURGETTE RISOTTO

  7. 1 sm Onion peeled and sliced.

  8. 1 Clove garlic crushed.

  9. 275 G, 10 oz leeks washed and Sliced Or 350 G 12 oz courgettes

  10. Sliced 350 g 12 oz risotto rice.

  12. 2,5 pt vegetable stock.

  13. lg Handful of parsley chopped.

  14. 15 ml 1 tbsp grated parmesan

  15. Cheese

  16. Heat the oil in a large saucepan and cook the onion

  17. and garlic until soft, about 5 minutes. Add the leeks

  18. or courgette and cook for 7 minutes stirring

  19. frequently. Add the rice and stir a couple of times

  20. until it is coated with oil. Stir in the stock a ladle

  21. full at a time always waiting for the previous

  22. addition to be absorbed before adding the next ladle

  23. full. Cook the rice for about 20 minutes. As soon as

  24. the rice is tender stir in the parsley and parmesan
