  2. PASTA AND WALNUT STIR-FRY

  6. 8 oz Angel Hair or Cappellini

  7. -- uncooked 3 tb Low-sodium soy sauce

  8. 2 tb Vegetable oil

  9. 1 t Sugar

  10. 1/8 ts Hot red pepper flakes

  11. 1 tb Vegetable oil

  12. 2 lg Carrots -- thinly sliced

  13. 1 Red or yellow bell pepper

  14. -- ribs and seeds removed,

  15. -- cut into small strips

  16. 3/4 c Toasted walnuts --divided

  17. 1/2 sm Red onion -- thinly sliced

  18. 4 oz Fresh snow peas

  19. 4 Fresh mushrooms, sliced

  20. 1/4 c Water

  21. Prepare pasta according to package directions. While

  22. pasta is cooking, in a small bowl, combine soy sauce,

  23. vegetable oil, sugar and red pepper flakes.

  24. Heat oil in a medium skillet over high heat. Add

  25. carrots, pepper, walnuts, onion, snow peas and mushrooms. Stir-fry 1 minute. Add water. Cook and stir

  26. 3 minutes longer. Add pasta and toss to mix. Add soy

  27. sauce mixture; toss well and serve.

  28. *To toast walnuts: In small skillet, heat 1 teaspoon

  29. vegetable oil. Add walnuts and cook and stir until

  30. 3 to 4 minutes.
