    2. CORN MEAL MUFFINS (SELBY)

    6. 3/4 c Corn meal

    7. 1 1/4 c Flour

    8. 1/2 ts Salt

    9. 2 ts Baking powder

    10. 2 tb Sugar

    11. 2 Eggs

    12. 3/4 c Milk

    13. 2 tb Lard

    14. Sift dry ingredients together in bowl, add milk and melted lard and beat well. Bake 20 minutes in hot oven.

    15. Note: Hot oven is 400 - 450 F.
