  1. 1 1/2 cups flour

  2. 1 tablespoon sugar

  3. 1/2 teaspoon salt

  4. 6 tablespoons cold vegetable shortening, cut into pieces

  5. 2 tablespoons cold butter, cut into 1/4-inch pieces

  6. 1/4 cup cold water

  1. In a large bowl, stir together the flour, sugar, and salt. Add the shortening and butter and use your fingers or a pastry blender to combine the ingredients into a coarse, damp meal. Slowly add the water, using a fork to blend the mixture as you pour. Continue to blend until it coheres. Turn the dough out onto a large piece of plastic wrap. Pack it together, being careful not to overwork it, then flatten the dough into a disk about ¾ inch thick. Wrap it in the plastic and refrigerate it for 1 hour. On a sheet of floured waxed paper, roll the dough into a 13-inch circle, then place it in a 9-inch deep-dish pie pan. Crimp the edges, then place it in the freezer for 20 minutes to firm before baking.
