  1. 1/2 1-pound bag frozen shrimp thawed

  2. 1 head of cauliflower core removed and broken into small pieces

  3. 1 pound sugar peas blanched and shocked in ice water

  4. 1 bunch asparagus trimmed cut into 2-inch lengths blanched and shocked in ice water

  5. 1/2 red onion diced

  6. 1 cup shredded chedar cheese

  7. 4 strips of bacon fried crisp and crumbled

  8. 1/2 cup ranch dressing

  9. 1 cup mayonaise

  10. 1/4 cup sugar

  11. 2 tablespoons fresh dill finely chopped

  12. 6 lettuce cups or red cabbage leaves

  1. drain and pat dry the sugar peas and asparagus. Mix shrimp and vegetables together. Add bacon and cheese. Mix ranch dressing, mayonnaise, dill and sugar. Pour over vegetables and gently toss. Refrigerate until chilled. Serve on lettuce cups. Yield: serves 6
