  1. 200 g rice noodles , the thick variety

  2. 1 tbsp sunflower oil , or peanut oil

  3. 2 tbsp grated ginger

  4. 500 g minced pork

  5. 50 ml hoi sin sauce

  6. 115 ml chicken stock

  7. 2 tbsp chopped coriander

  8. 1 tbsp shredded basil

  1. Method Cook the noodles in boiling water for about 8 minutes, before draining. While the noodles are cooking, heat the oil in a wok, add the ginger and pork and fry for about 5 minutes. Add the hoisin sauce and chicken stock, and cook for two more minutes. Toss in the coriander, basil and noodles, season to taste and serve straightaway.
