  1. 2 cup(s) chopped onions

  2. 2 pound(s) extra-lean, double-ground beef

  3. 1 pound(s) lean chorizo , removed from casing and chopped

  4. 1 cup(s) seasoned dried bread crumbs (Italian)

  5. 2/3 cup(s) shredded Cheddar cheese

  6. 1/2 cup(s) beef broth

  7. 2 eggs , lightlty beaten

  8. 1 teaspoon(s) salt

  9. 2 teaspoon(s) dried thyme

  10. 2 teaspoon(s) paprika

  11. 1 teaspoon(s) pepper

  12. 1 teaspoon(s) ground allspice

  13. 1 teaspoon(s) crushed dried oregano

  1. Preheat oven to 350 degrees F. Sauté onions. (See Tips & Techniques.)

  2. Mix with other ingredients well. Shape into a loaf (not too high) and bake in a large pan for 1 1/2 hours. If your oven runs hot, shape a foil tent over loaf to keep it moist.

  3. Tips & Techniques We sautéed the onions in 2 tablespoons salad oil until very tender before adding to meat mixture for smooth texture and flavor.
