  1. 1 stick (1/2 cup) butter or margarine, softened 1 cup granulated sugar 2 large eggs plus 1 egg yolk(save white for later use in this recipe) 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon pure almond extract 1 teaspoon pure vanilla extract 1 large egg white 1/2 cup firmly packed brown sugar(your choice) 1/2 teaspoon pure vanilla extract 1/2 cup chopped nuts (pecans or almonds are good) 1 4-ounce bottle maraschino cherries(red or green), drained and chopped

  1. Grease 9"x13"x2" inch baking pan. Preheat oven to 350 F. degrees. Method: In mixing bowl cream butter and sugar until fluffy(3 minutes). Add eggs and egg yolk until mixed well. Sift flour, baking powder and salt on to wax paper, and add to creamed mixture. Add the almond extract and 1 teaspoon vanilla extract. Spread the batter in prepared pan. Beat egg white and add the brown sugar and the remaining 1/2 teaspoon vanilla. Spread over batter in pan. Sprinkle with chopped nuts and cherries. Bake for about 30 minutes. Cool and cut into 24 bars or squares. These are delicious and won't last long. First cookie to vanish at parties. For a tropical flare try adding 1/4 cup diced glace' pineapple, 1/4 cup coconut and 1/2 cup chopped macadamia nuts along with cherries. Leave off pecans.
