  2. 1 eggplant

  3. 1/2 teaspoon salt

  4. 1/4 teaspoon pepper

  5. 2 tablespoons olive oil

  6. 2 tablespoons lemon juice

  7. 2 tablespoons finely chopped scallion

  8. 2 tablespoons finely chopped parsley

  9. 1 garlic clove -- finely chopped

  1. Bake eggplant whole and unpeeled for 1 hour at 450F. Peel. Place eggplant in a bowl.

  2. Chop or mash. Add all remaining ingredients. Mix well. Chill.
