  1. 8 eaches Baking potatoes

  2. cup Butter melted

  3. teaspoon Salt

  4. teaspoon Paprika

  5. cup Green onions -- finely

  6. Chopped cup Bacon -- cooked finely

  7. Choppe

  8. cup Ham -- cooked

  9. Or shrimp (optlonal)

  10. cup Green peppers -- chopped

  11. 1 cup Cheddar cheese --

  12. 4 oz.

  13. Shredded 1 cup Sour cream

  1. Bake potatoes at 400 deg. for 1 hour or until tender. Cool slightly; cut in half lengthwise and scoop out pulp, leaving ¼ in. of pulp still attached to skin. (The potato pulp you remove can be refrigerated for use later.) Cut skins into strips or halves; brush skin sides with melted butter and place on a baking sheet. Sprinkle pulp sides with salt and paprika; cover with the green onions, bacon, ham or shrimp, and chopped peppers. Top with the cheese. Bake at 450 deg. until cheese is melted and skins are crisp, about 10-15 minutes.

  2. Garnish each skin with a dollop of sour cream. Serve immediately.
