  1. 1 cup brown sugar

  2. 6 tablespoons flour

  3. 1 teaspoon salt

  4. 2 cups milk

  5. 2 tablespoons butter

  6. 2 eggs , separated

  7. 1 teaspoon vanilla

  8. 1 9-inch baked pie crust

  9. 1/4 cup white sugar

  10. 1/4 teaspoon cream of tartar

  1. Mix the brown sugar, flour and salt in the top of a double boiler.

  2. Stir in the milk, add the butter and cook over simmering water, stirring, until thickened.

  3. Let cook 20 minutes, stirring occasionally.

  4. Beat 2 egg yolks.

  5. Temper them with a little of the hot mixture, then stir them into the pudding.

  6. Cook 5 minutes longer.

  7. Remove from heat.

  8. Add the vanilla, then pour into the prepared pie shell.

  9. Beat the egg whites and cream of tartar until stiff, beating in the sugar a little at a time to make a meringue.

  10. Spread on top of pudding and brown in a 350*F oven for about 10 minutes or until golden. ?
