  1. 1 lb 454g / 16oz Chicken breasts - skinned>> Cut into strips

  2. 1 cup 146g / 5.1oz Broccoli flowerets

  3. 1 cup 110g / 3.9oz Carrot strips - cut>> Matchstick size.

  4. 1/2 cup 31g / 1.1oz Onion - cut in wedges

  5. 1 Cream of broccoli soup

  6. 2/3 cup 157ml Water

  7. 2 teaspoons 10ml Soy sauce - lo-sodium

  8. 1/4 teaspoon 1 1/3ml Ginger - ground

  9. 4 cups 640g / 22oz Rice - cooked, no salt

  1. Recipe Instructions Spray nonstick skillet with cooking spray. Heat 1 min. Stir-fry chicken in 2 batches until browned. Remove. Remove skillet from heat, spray skillet with cooking spray. Stir-fry vegetables until tender-crisp. Add soup, water, soy sauce and ginger; heat to boiling. Return chicken to skillet. Heat through. Serve over hot cooked rice.
