  2. 1 tablespoon butter

  3. 2 tablespoons chopped fresh garlic

  4. 1 cup chopped red onion

  5. 1 mango -- peeled, seeded,

  6. -- and diced 3 cups rice wine vinegar

  7. 1 bottle ketchup

  8. 1 box brown sugar

  9. 3 tablespoons chipotle puree

  10. 2 tablespoons ground ginger

  11. 1 tablespoon ground cinnamon

  12. 1 1/2 tablespoons ground cloves

  13. salt -- to taste

  14. freshly-ground black pepper -- to taste

  1. In a sauce pan melt butter over medium heat, add garlic and onions and sweat until translucent.

  2. Add the rest of the ingredients and bring to a boil.

  3. Reduce heat and simmer for 10 minutes. Season to taste with salt and pepper.

  4. Puree and store in refrigerator.

  5. May be made 1 week in advance and stored in the refrigerator.

  6. Yields: 1 quart of ketchup.
