  1. Corn Pudding

  2. 2 tsp olive oil

  3. 1 sm onion, diced

  4. 2 cloves garlic, chopped

  5. 4 c fresh corn

  6. 3 eggs

  7. 1/2 c. flour

  8. 1 c half and half (medium-heavy cream)

  9. 1 tsp. chopped basil

  10. salt pepper

  11. 1/4 c each Parmesan, Gouda, sharp Cheddar

  12. Saute onion and garlic in olive oil, in sauce pan. Add drained

  13. corn, and heat.

  14. Make the custard: add flour to beaten eggs; add the 1/2 and 1/2,

  15. the chopped basil, and salt and pepper to taste. Put the corn

  16. mixture in a greased shallow casserole dish and pour the custard

  17. over. Mix the 3 cheeses and sprinkle them evenly on top.

  18. Bake at 350 deg. until the custard is set (about 35-45 minutes).
