  1. 1 lb 454g / 16oz Fresh okra

  2. 3 tablespoons 45ml Ghee

  3. 1 1/2 tablespoons 22ml Coriander

  4. 1/2 teaspoon 2 1/2ml Cumin

  5. 1/2 teaspoon 2 1/2ml Hungarian paprika

  6. 1/2 teaspoon 2 1/2ml Garam masala

  7. 1/2 teaspoon 2 1/2ml Turmeric

  8. 1 tablespoon 15ml Salt

  1. Wash and thoroughly dry okra. Trim the bottom and top and slice into rounds half an inch thick. In a large skillet, heat the ghee and add the okra in a single layer. Cook over a moderate heat for 20 minutes.

  2. Stir occasionally.

  3. Add the spices and continue to stir and fry until the okra is golden brown.

  4. Remove from the heat, sprinkle with salt and serve.
