  1. Green Beans and Chickpeas in Groundnut Sauce

  2. serves about 4

  3. 1 can chick peas

  4. 1 small onion, chopped

  5. 4 C french-cut green beans

  6. 1 inch piece ginger, chopped

  7. 2 cloves garlic, chopped

  8. 6 T water

  9. 1 T oil

  10. 1/4 C peanut butter

  11. 1 C coconut milk

  12. 2 C chopped tomato, about 2 medium, peeled

  13. 2 t curry powder

  14. 1 t salt

  15. 1 t coriander

  16. 1/4 t red pepper flakes

  17. 1/2 t basil

  18. Saute onion, garlic, and ginger in oil and 2 T water. Add curry

  19. powder, salt, coriander, and pepper and stir till hot. Add green

  20. beans and stir till coated. Add coconut milk, peanut butter, and remaining 1/4 C water. Boil. Reduce to a simmer, stir in tomatoes,

  21. basil, and drained can of chick peas. Simmer 20 minutes, uncovered.

  22. Serve over rice.
