  1. Oil, for frying, preferably peanut oil

  2. 3 eggs

  3. 11/4;kg chicken, cut into pieces

  4. House seasoning, recipe follows

  5. 240ml hot red pepper sauce

  6. 300g self-raising flour

  7. For the house seasoning:

  8. 180g salt

  9. 45g pepper

  10. 45g garlic powder

  1. Southern fried chicken 1) Heat the oil to 180C in a deep pan or fryer. Do not fill the pan more than half full with oil.

  2. In a medium bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 240ml).

  3. Season the chicken with the house seasoning. Dip the seasoned chicken in the egg and then coat well in the flour.

  4. Place the chicken in the preheated oil and fry until brown and crisp. Cooking time is approximately 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

  5. For the house seasoning:

  6. 1) Mix the ingredients together and store in an air-tight container for up to 6 months.
