  1. 6 C. fresh fruit (blueberries or strawberries, bananas, or pineapple)

  2. 1 8 oz. cartoon low fat vanilla yogurt

  3. 1/2 C. part-skim ricotta cheese

  4. 1/4 C. packed brown sugar

  1. Divide fruit among four 12 to 16 ounce au gratin dishes. Place dishes in a 15x10x1 baking dish. In a small bowl stir together yogurt and cheese. Spoon yogurt mixture over fruit. Sprinkle brown sugar.

  2. Bake, uncovered at 450 for 7-8 minutes, or until brown sugar is melted.

  3. If you serve it cold just toss fruit and yogurt.

  4. Makes 4 servings.
