  1. 1 medium onion chopped

  2. 1 cup diced carrots

  3. 1 red bell pepper diced

  4. 1 cup fresh or frozen green beans cut into 1/2 inch pieces

  5. 1 cup canned or frozen corn drained if canned

  6. 1 15oz can vegetarian baked beans

  7. 1 tsp barbecue seasoning or barbecue sauce

  8. 1 Tbsp ketchup or tomato paste

  9. 3 oz smoky cheddar or smoky Edam cheese diced or shredded

  1. Heat oven to 375. In a non-stick skillet, sauté the onions, carrots and pepper until soft but not browned. Add the green beans and cook 5 minutes. Stir in the corn, baked beans, seasoning and ketchup. Cook 2 minutes until heated through. Pour into a baking dish and scatter the cheese on top. Cover and bake for 30 minutes until the casserole is bubbling and the cheese has melted. Yield: serves 6
