  1. 3 cups cooked rice

  2. 3 cups diced cooked turkey

  3. 1 tomato, seeded and diced

  4. 1/4 cup sliced green onion

  5. 1/4 cup diced green bell pepper

  6. 1 teaspoon crushed basil

  7. 1/2 teaspoon seasoned salt

  8. 1/8 teaspoon cayenne pepper

  9. 1/2 cup milk

  10. 3 large eggs, beaten

  11. 1/2 cup shredded cheddar cheese

  12. 1/2 cup shredded mozzarella cheese

  1. Preheat oven to 350 °F (175°C). Lightly spray an 11 x 7 x 2-inch baking dish with vegetable cooking spray; set aside.. Combine rice, turkey, tomato, green onion, green bell pepper, basil, seasoned salt, cayenne pepper, milk and beaten eggs in a large bowl; mix thoroughly. Pour into prepared baking dish; bake for about 25 minutes or until center is nearly set. Open oven; sprinkle with cheddar cheese and mozzarella cheese on top. Return to oven; bake an additional 2 minutes or until cheese is melted. Remove from oven; allow to sit about 5 minutes before serving to allow mixture to set. Serve warm; otherwise refrigerate until ready to serve.
