  1. 3 medium yellow summer squash, sliced

  2. 2 medium zucchini, sliced

  3. 1 medium red onion, sliced and separated into rings

  4. 1 teaspoon minced garlic

  5. 1 tablespoon olive oil

  6. 1 teaspoon dried parsley flakes

  7. 1 teaspoon dried basil

  8. 1/2 teaspoon dried oregano

  9. 1/2 teaspoon dried thyme

  10. 1/4 teaspoon salt

  11. 1/2 cup shredded part-skim mozzarella cheese

  1. In a large nonstick skillet, saute the yellow squash, zucchini, onion and garlic in oil until crisp-tender, stirring occasionally. Stir in the parsley, basil, oregano, thyme and salt. Remove from the heat. Sprinkle with cheese; cover and let stand until cheese is melted. Yield: 6 servings.
