  1. 1 cup bulgur wheat

  2. 1 cup boiling vegetable stock

  3. 2 tablespoons chopped parsley

  4. 1/4 cup diced green or red bell pepper or carrot

  5. 3 green onions, thinly sliced

  6. 2 cups shredded Cheddar or jack cheese

  7. 1 cup whole kernel corn, cut off cob, or frozen and thawed

  8. 1 egg, lightly beaten

  9. 1 can tomato sauce

  10. 1 teaspoon dry basil

  11. 1/2 teaspoon each oregano leaves and garlic salt

  12. 1/4 teaspoon pepper

  1. Directions In a large bowl, combine bulgur and stock.

  2. Stirring occasionally, let stand for about 1 hour or until liquid is absorbed.

  3. Stir in parsley, bell pepper, onions, cheese, corn, and egg.

  4. Add tomato sauce, basil, oregano, garlic salt, and pepper and stir gently.

  5. Spoon into a shallow greased 1 1/2 quart casserole.

  6. Cover and bake in a 350° oven until heated through (25 to 30 minutes).
