  2. 4 Eggs

  3. 2 cups 396g / 13oz Sugar

  4. 1 cup 237ml Oil

  5. 2 cups 125g / 4.4oz Unbleached flour

  6. 2 teaspoons 10ml Baking powder

  7. 1 1/2 teaspoons 7 1/2ml Baking soda

  8. 1 teaspoon 5ml Ground cinnamon

  9. 1 teaspoon 5ml Vanilla extract

  10. 3 cups 711ml Shredded fresh beets

  11. 1 cup 146g / 5.1oz Chopped walnuts

  12. Cream Cheese Frosting

  13. 8 oz 227g Cream cheese - softened

  14. 1/2 cup 118ml Whipping cream - (to 3/4 cup)

  15. 1 teaspoon 5ml Almond extract

  16. 1/2 cup 99g / 3 1/2oz Powdered sugar

  1. For the Cake: Beat together the eggs, sugar and oil until fluffy. Sift together the flour, baking powder, baking soda and cinnamon in a large bowl. Add the dry ingredients to the egg mixture and stir well to blend. Add the vanilla, beets and walnuts. Beat together 1 minute.

  2. Pour the batter into a 13- by 9-inch baking pan. Bake the cake at 350 degrees until a toothpick inserted in the middle comes out clean, 35 to 45 minutes.

  3. For the Cream Cheese Frosting: Blend together the cream cheese, whipping cream, almond extract and powdered sugar in a blender or mixer until fluffy. Spoon onto the cooled cake or serve separately to dollop the cake.

  4. This recipe yields 12 servings.
