  1. Thai red chicken curry 2 14-oz cans coconut milk

  2. 2 green onion stalks, chopped into small sections

  3. 3 jalapeno peppers, cut into thin strips

  4. 1/4 cup fish sauce

  5. 3 cups chopped zuccini

  6. 1 lb chicken breast, cut bite-sized

  7. 2 tbsp red curry paste

  8. 1 bunch basil

  9. Heat 3/4 cup of coconut milk till boiling. Add the curry paste,

  10. stir it in until evenly blended. Add the chicken, heat at medium

  11. heat until the chicken is thoroughly cooked. Add the remaining

  12. ingredients and heat over low heat until boiling. Remove from heat

  13. and serve over rice.
