  1. 2 boneless chicken halves

  2. 2 tablespoons soy sauce

  3. 1 tablespoon oil

  4. 1 teaspoon minced fresh ginger

  5. 6 tablespoons chunky peanut butter

  6. 1/2 cup chicken broth

  7. 1 tablespoon brown sugar

  8. 1 tablespoon soy sauce

  9. 1 1/2 teaspoons chili paste with garlic

  10. 2 green onions -- sliced

  1. Preparation : Place chicken in small baking pan. Pour over soy sauce and oil. sprinkle breasts with ginger. Turn to coat, about 20 minutes. Preheat oven to 450 degree oven. Roast chicken breasts until just cooked through, about 20 minutes. Meanwhile, prepare sauce: combine peanut butter, broth, sugar, soy, ginger and chili paste in heavy small saucepan. Simmer until smooth and slightly thickened, about 2 minutes. Arrange chicken breasts on plates. Spoon sauce over chicken. Sprinkle with green onions. Serve with rice.
