  1. 4 slices Bacon - diced, up to

  2. 1 cup 62g / 2 1/5oz Onion - diced

  3. 1 cup 110g / 3.9oz Celery - diced

  4. 3 tablespoons 45ml All-purpose flour

  5. 1 1/3 cups 315ml Water

  6. 2/3 cup 157ml Cider vinegar

  7. 1/4 cup 49g / 1.7oz Sugar

  8. Salt

  9. Freshly ground pepper

  10. 4 lbs 1816g / 64oz Potatoes - cooked, diced

  1. Preparation time: 20 minutes. Cooking time: 50 minutes. Heat oven to 350F. Cook bacon in a flameproof casserole until crisp; remove to paper towels with a slotted spoon. Drain off all but 1/4 cup fat from casserole.

  2. Stir in celery and onion; cook 1 minute. Sprinkle flour over and mix well. Add water and vinegar; cook until mixture thickens. Add sugar, salt and pepper. Add potatoes and bacon and mix lightly.

  3. Cover casserole and bake for 30 minutes. Serve hot or at room temperature.
