  1. 2 potato es, cubed

  2. 1 carrot , sliced

  3. 2 onion s, (white and red) sliced

  4. 1 green pepper , chopped

  5. 1 red pepper , chopped

  6. 1 zucchini , chopped

  7. 1/3 cup fat free Italian salad dressing

  8. 1/4 teaspoon cayenne pepper

  1. Preheat oven to 350°. Spray a 9x13 inch baking pan with cooking spray.

  2. In prepared pan combine potatoes, carrots, onions, peppers, zucchini.

  3. In a small bowl combine Italian dressing, garlic salt, onion salt and cayenne pepper. Pour over vegetables.

  4. Bake covered for 15 minutes. Uncover; stir, and bake an additional 10 minutes.
